Prepare the lemon cream by mixing the eggs, lemon juice and zest, honey in a saucepan and heat for 2-3 minutes, stirring constantly. Allow to cool for 1-2 hours and the cream to thicken.
Roll out the dough into a rectangle measuring 15 by 30 centimeters.
Put it in a tray and pierce with a fork. Cover with a sheet of baking paper and place a second tray on top. Bake at 180 degrees for 15 minutes until golden crispy.
Put the lemon cream on the puff pastry and sprinkle with blueberries.
Make a net on top with honey and sprinkle with small coriander leaves.
