How To Cook Puff Potatoes With Duck Butter - Recipe

Required products :

  • 2,200 pounds of potatoes
  • 1/2 cup melted duck butter
  • salt and oil for frying

Method of preparation :

Cut the potatoes into thin slices using a mandolin grater.

Add salt and put them in a bowl. Drizzle them with duck fat and stir to grease well.

Line a rectangular tray (16 by 16 cm) with baking paper, placing 2 sheets crosswise so that the edges protrude from the pan.

Start arranging the potatoes next to each other, then in the next row, covering all the holes between them. When you have finished ordering, pour the duck fat, which has separated at the bottom of the dish in which the potatoes were.

Fold the edges of the paper over the potatoes and place another sheet of baking paper on top. Finally, wrap with aluminum foil.

Bake for 2-3 hours at 150 degrees.

Remove the aluminum foil (do not remove the baking paper) from the pan. Place a tray of the same size on top of the potatoes and place a few unopened cans in it. Leave the potatoes pressed in this way to cool for 1 hour, then transfer to the refrigerator, along with the weight, to stand for 8 hours or 1 night.

Remove the weight and let the potatoes relax slightly, then cut them into cubes.

Arrange them in a pan and freeze for 30 minutes.

Meanwhile, heat the oil. Fry the potatoes in batches for about 5-6 minutes until golden brown.

Sprinkle with salt and serve.
