What could make pumpkin cupcakes even better? Mini chocolate chips, of course. In this recipe for healthy pumpkin and chocolate cupcakes
we will use wholemeal flour, and for sweetening - brown sugar. Light, pleasant and not very sweet, but very tasty muffins.

Necessary products:

  • 1 and 1/4 cup wholemeal flour (or einkorn flour)
  • 1 and 3/4 teaspoons homemade spice for pumpkin pie
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup pumpkin puree
  • 2/3 cup brown sugar
  • 1/4 cup buttermilk
  • 1/4 cup melted butter + to spread the forms
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup mini chocolate chips

* A tea cup is used to measure the quantities.

Method of preparation:

Preheat oven to 180 degrees. Grease the muffin tins with butter (or fat of your choice).

In a medium bowl, mix the flour, homemade pumpkin pie seasoning, baking powder, baking soda and salt.

In a large bowl, beat the pumpkin puree, brown sugar, buttermilk, butter, eggs and vanilla until smooth.

Add the dry ingredients to the wet ones and mix with a wooden spoon until smooth. Add the chocolate chips and stir again.

Distribute the resulting dough in muffin tins and bake for about 25 minutes or until done, then allow to cool for at least 5 minutes and serve. If desired, you can garnish with honey, maple syrup, liquid chocolate or fresh fruit.
