Thanks to the variety of recipes, you can include pumpkin in so many desserts these days. And the best part is that the puree needed in most of them is obtained perfectly from the leftovers of your favorite roasted pumpkin with honey and walnuts.

Required products :

  • 1/2 cup pumpkin puree
  • 3/4 tea cup melted butter
  • 3/4 tea cup brown sugar
  • 3/4 tea cup crystal sugar
  • 1 large whole egg + 1 yolk
  • 2 teaspoons vanilla extract
  • 2 1/4 tea cups white flour (you can use wholemeal if desired, increasing the amount to 2 1/2 tea cups)
  • 2 teaspoons pumpkin spice
  • 1/2 teaspoon salt
  • 1 3/4 tea cup chocolate drops or crushed chocolate

Method of preparation :

Turn on the oven to preheat to 175 degrees.

Place a sheet of paper in a rectangular tray measuring approximately 18 by 30 centimeters and spray with cooking spray.

Mix the puree with the butter and both types of sugar with a whisk. When combined, add the eggs and vanilla.

In another bowl, mix the flour and spice, pour in the liquid products. Combine and add most of the chocolate.

Pour into the pan and flatten with a spatula, sprinkle the remaining chocolate drops on top, trying to distribute them evenly.

Bake the dessert for 25 minutes.

Cool and remove from the paper container. The cake is flat and with a slightly moist texture. Before serving, cut into squares.
