Dissolve the sugar (for the dough) in warm water, add the flour mixed with the yeast, a pinch of vanilla and a pinch of salt. Stir with a spoon, pour in the oil and knead the dough.
Shape it into a ball, put in a bowl, cover with a towel and leave for an hour to rise (during this time the volume will increase 2-3 times).
Until this happens, grate the pumpkin, pour the dried apricots with boiling water for 5 minutes, then mix the two products. Add the sugar just before spreading the filling on the dough.
Once the dough rises, roll it out into a square and place the fruit filling evenly on it.
Mentally divide the dough into three parts and fold one towards the center (on the middle), then the third on the first.
This is followed by a similar folding in the opposite direction, like a handkerchief.
Cut into 4 pieces, transverse to the last folds.
Roll out each piece into strips 7-8 millimeters thick and cut the strips in half (widthwise). Then cut the strips along the middle, but not completely (in one part to remain connected about 1.5-2 centimeters).
Twist them and form a loaf by joining the two ends in a circle.
In this way, continue with the rest of the dough. Arrange the loaves in a pan on a greased sheet of parchment and bake for 25-30 minutes in an oven preheated to 180 degrees.
To make them blush nicely, you can spread them with fresh water (2 teaspoons of sugar dissolved in 5-6 tablespoons of water).
When baked and cooled, sprinkle with powdered sugar and serve.
