Cut the pumpkin in half, remove the seeds, peel the skin and cut the inside into small cubes.
Peel onions and garlic, chop and fry briefly in 1 tablespoon olive oil. Then pour the remaining olive oil, add the pumpkin, rice and stew everything for 5 minutes. Then pour the white wine and let the mixture prepare until it evaporates. Fix.
Pour half of the hot broth over the pumpkin and rice. Add the bay leaf, citrus peel and let the dish cook for 20-25 minutes, periodically adding the remaining vegetable liquid and stirring often.
Then remove the bay leaf and lemon zest, sprinkle the hot risotto with the grated yellow cheese and spread the dish on a plate.
