How To Cook Pumpkin Cake With Ginger And Caramel Sauce - Recipe

Required products :

350 g peeled and cut into pieces of pumpkin
180 g butter at room temperature
2 teaspoons vanilla extract
20 g fresh ginger, peeled and finely shredded
250 g of brown sugar
1 teaspoon grated orange peel
3 eggs
450 g flour
2 teaspoons shredded dry ginger
1 teaspoon ground cinnamon
1/2 teaspoon grated nutmeg
1/4 teaspoon salt
2 1/2 teaspoons baking powder
1 teaspoon baking soda
250 grams yogurt or skim sour cream

For the caramel sauce:

20 grams of butter
50 grams of brown sugar
1 tablespoon rum, cognac or whiskey

For decoration:

nuts optionally
candied orange peel

 

Method of preparation :

Boil the pumpkin, drain the water and mash the vegetables to make a puree.

Using a mixer, beat the butter with the vanilla essence, grated fresh ginger, sugar, orange peel. You should get a creamy consistency, to which you add the eggs one by one, beating after each.
Then add the pumpkin puree.

In a separate bowl, mix all the spices, baking soda and baking powder with the flour.

Add half of the yoghurt to the pumpkin mass, stirring by hand with a wooden spatula. Then put half of the dry mixture, stir again. Followed by the remaining milk and flour, respectively.

Spread the dough in a greased high cake tin with a hole in the middle. Bake in a preheated 180 degree oven for about an hour (or until ready, which you check with a toothpick).

Once you take the cake out of the oven, wait for it to cool in the pan for about 15 minutes and then take it out on a rack, where you leave it to cool completely.

Make the caramel sauce by mixing the butter with the sugar in a small saucepan. Put on low heat and stir until the sweet crystals melt and the contents of the dish become homogeneous. Boil for 5 minutes to thicken the consistency a bit, remove from the heat and pour in the alcohol.

Garnish the cake with nuts, candied orange peel, pour the caramel sauce and serve.
