Necessary products

For the dough:

  • 200 grams of flour
  • 2 eggs
  • 110 milliliters of oil
  • 180 grams of sugar
  • 2 teaspoons leavening agent
  • 200 grams of pumpkin (cleaned of seeds and peel)
  • orange peel (from 1 citrus)
  • packet of vanilla sugar
  • pinch of salt

For cream:

  • 400 grams of sour cream
  • 100 grams of sugar
  • juice of 1 orange
  • 3 tablespoons sugar


Method of preparation :

  • Make two swamps

Mix the eggs with both types of sugar (vanilla and regular). You should get a fluffy white mass, which takes about 7-10 minutes of beating.

Then pour the oil and mix until smooth. Add a pinch of salt, pour the flour, baking powder and continue to beat.

To the resulting dough add the pre-grated pumpkin and peel of 1 orange, stir.

Divide the mixture into two equal parts, from which bake the tops (about 25-30 minutes at an oven temperature of 180 degrees). Use a cake tin with a diameter of 18 cm, cover the bottom with a sheet of parchment. Check the readiness of the pumpkin bases with a toothpick. Allow the countertops to cool.

If you have time, it is good to wrap each of them separately in plastic wrap and store in the refrigerator for several hours.

 

  • Prepare the cream

The sour cream you use should be very thick. If not, pre-pour it on several layers of gauze, place in a sieve / colander and wait for the liquid to drain (leave overnight in the refrigerator).

Then add the sugar and just stir. Wait a while for the crystals to melt.

 

  • Boil orange syrup

Squeeze the juice of an orange, pour it into a small saucepan and add 3 tablespoons of sugar. Place on the stove and cook on low heat for 8-10 minutes, during which time stir the liquid. The consistency should resemble that of liquid honey.

When the syrup has cooled, put it in the fridge to cool. Once this is done, pour it (in several portions) into the cream, stirring constantly. A delicious orange-cream is obtained.


With a sharp knife, cut the "caps" of the marshmallows to have flat bases that will more easily absorb the cream. Grate these pieces or crush them.

 

 

  • Assemble the cake

Place one tray in a suitable container / tray. Apply half of the cream and place the second loaf on it without pressing it against the first.

Spread the remaining amount of orange sweetness on the surface and walls of the cake, sprinkle on it the crumbs obtained from the grated parts of the tops.

Put the cake in the refrigerator for 4-5 hours.

Garnish with orange slices and enjoy the delicate and extremely tasty dessert.
