The sweet pumpkin is fortified with brown sugar and pumpkin pie spice in perfect balance. Easy to prepare pumpkin cheesecake, which is sure to become the favorite dessert of all guests at your holiday dinner.

Required products :

for the base:

  • 1 and 1/2 cups of crushed ginger biscuits (about 30 biscuits)
  • 1/2 cup pecans (or walnuts), finely chopped
  • 6 tablespoons melted butter
  • 1/4 cup sugar

for the filling:

  • 3 packets of 220 grams of cream cheese at room temperature
  • 1/2 cup light brown sugar
  • 1/4 cup white sugar
  • 2 large eggs + 2 large egg yolks, at room temperature
  • 1 cup canned pumpkin puree
  • 1/2 cup sour cream, at room temperature
  • 2 teaspoons vanilla extract
  • 1 and 1/2 teaspoons flour
  • 2 teaspoons spice for pumpkin pie

Method of preparation:

Preheat oven to 180 degrees.

Grease a round pan with a falling bottom with a diameter of 20 centimeters. Cover the tray with foil on the outside.

Mix the crushed ginger biscuits, pecans, butter and sugar in a bowl. Pour into the prepared pan and press the mixture on the bottom and sides of the round pan. Bake for 10 minutes, then cool.

the filling:

Beat the cream cheese, white and brown sugar with an electric mixer on medium speed until light and homogeneous. Add the eggs, egg yolks, pumpkin puree, sour cream and vanilla extract one at a time, beating until the mixture is homogenous. Reduce the speed and add the flour and pumpkin pie seasoning. Pour the prepared filling on the base.

Put the cheesecake tin in a large baking tray filled with two fingers of hot water and bake the dessert for 55-65 minutes or until done. Remove from the oven and allow to cool to room temperature. Cover and refrigerate for at least 10 hours or up to 2 days.

Cut into pieces and serve with a glass of warm milk, tea or other beverage.
