Necessary products

 

For the dough:

  • 1.5 teaspoons flour
  • 1 teaspoon grated ginger
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup pumpkin puree
  • 1 teaspoon brown sugar
  • 1/2 teaspoon vegetable oil
  • 1 large egg
  • 1 tablespoon honey or thick fruit syrup

 

For cream:

  • 100 grams of soft cream cheese
  • 5 tablespoons softened butter
  • 1/8 teaspoon salt
  • 3 teaspoons powdered sugar

 

Method of preparation :

Preheat the oven to 180 degrees, cover the bottom of the form with baking paper.

In a suitable bowl, mix the flour, ginger, cinnamon, baking powder, baking soda and salt.

In a separate bowl, mix the pumpkin puree with the sugar, add the oil, egg, honey and beat everything with a mixer for 3 minutes on medium speed.

Then continue to beat thoroughly and add the dry mixture in portions. Stir for about half a minute. Using a pastry syringe, shape the cookies, arranging them in the prepared tray at some distance from each other.

Bake them for about 10 minutes (or until done) in a preheated oven and remove to cool.

Make the cream by whipping the cream cheese with the butter for about 3 minutes. Then add 2.5 cups of powdered sugar, beat for another minute.

If your texture seems too runny, add 1 teaspoon of powdered sugar until the mixture reaches the desired texture.

Glue the cookies two by two with cream and serve.
