Required products :

  • 500 grams of pumpkin, peeled and cut into pieces
  • 1 eggplant, cut into thin slices
  • 1 large zucchini, cut into slices
  • 2 tablespoons olive oil
  • 500 grams of puff pastry
  • 1 egg, broken
  • 250 grams of Camembert cheese, cut into cubes

Method of preparation :

Drizzle the chopped vegetables with olive oil and spread them on the bottom of a large pan. Season with salt and pepper and bake at 200 degrees for 40 minutes until soft. Allow to cool.

Divide the puff pastry sheets into two equal parts. Roll out half into a square with sides of 25 centimeters.

Transfer to a paper-lined tray and spread with egg.

Spread half of the cheese in the center of the dough, forming a circle about 18 cm in diameter. Add the vegetables to the cheese and add the remaining cheese.

Roll out the second sheet of puff pastry in the same way and place on top of the vegetables. Cut the two layers of dough into a circle and tightly close the edges of the dough, gluing them together. Spread the pie with egg.

With a small knife, make a decoration of your choice with the rest of the dough and stick it on the pie.

Bake for 35-40 minutes, until the vegetable pie acquires a golden brown crispy crust.

Cool for 5 minutes before cutting.
