Required products :

  • 500 grams of zucchini
  • 1/4 teaspoon salt
  • 3/4 tea cup, finely chopped onion
  • 2 cloves garlic, pressed
  • 1 cup breadcrumbs
  • 2 eggs, lightly beaten
  • 150 grams of grated cheese
  • 1/2 cup grated yellow cheese
  • 1 tablespoon dried oregano
  • 1/2 cup flour
  • grease for lubrication

Milk sauce :

  • 1 cup yogurt
  • 1 teaspoon lemon juice
  • 1 teaspoon olive oil
  • 2 teaspoons fresh mint, finely chopped
  • salt and pepper

Method of preparation :

  • Peel a squash, grate it and put it in a colander.
  • Sprinkle with 1/4 teaspoon of salt, stir and allow to drain for 30 minutes.
  • Use your hands to drain the remaining water and place the zucchini in a bowl.
  • Add the remaining ingredients (excluding the grease) and mix well to distribute evenly.
  • Grease the bottom of two pans and use a spoon to shape the pumpkin meatballs.
  • Bake in a preheated 180 degree oven for about 20-25 minutes until golden brown and crispy.
  • Meanwhile, make the milk sauce by mixing all the ingredients and mixing well.
  • Serve the pumpkin meatballs warm, garnished with lemon slices and milk sauce.
