How To Cook Pumpkin Salad With Arugula, Bacon And Parmesan - Recipe

Required products :

  • 600 grams of pumpkin
  • 100 grams of arugula
  • 150 grams of raw smoked bacon
  • 60 grams of parmesan
  • 1 tablespoon mustard seeds and honey
  • 4 tablespoons olive oil
  • 2 teaspoons capers
  • 2 teaspoons balsamic vinegar
  • pepper

Method of preparation :

Peel a squash, grate it and roast it (about 20 minutes at 180 degrees), it should not soften completely, because it will turn into a mush.

While the pumpkin is roasting, cut the raw smoked bacon into thin straws and fry in its own fat until golden brown. Carefully remove the pieces from the pan with a slotted spoon and place on paper to absorb unnecessary fat.

Wait for the finished pumpkin to cool and then cut it into small cubes, which you transfer to the salad bowl. Add coarsely grated Parmesan cheese, a few capers, season with salt and pepper.

Put arugula leaves on top (you can chop or use whole).

In a separate bowl, mix olive oil, honey, mustard and balsamic vinegar. Beat with a fork until smooth.

Season the salad with this dressing and serve.
