During the summer months we are flooded with ideas and recipes for zucchini spaghetti. They are very tasty, but let's face it, they are not very nutritious. But with pumpkin spaghetti, things are different. It is far more filling, very useful and tasty.

Required products :

  • 1 large pumpkin
  • 1 tablespoon olive oil
  • salt to taste

for the sauce:

  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 1 clove of garlic, peeled and finely chopped
  • 2 tablespoons flour
  • 1 1/2 teaspoons fresh milk
  • 1 teaspoon mustard
  • 1 tablespoon basil or sage
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons grated Parmesan cheese

Method of preparation :

Peel a squash, grate it and squeeze the juice. Use a spiralizer to make it into spaghetti. If you do not have such a device, you will be done with a chatter that cuts thin strips. In case you don't have one, you can trust an ordinary peeler, with which you will get very thin slices, and then cut or leave wide with a knife.

Heat 2 tablespoons olive oil in a pan and pour the pumpkin spaghetti. Stew, stirring occasionally, until softened. Season with salt and pepper and remove from the heat.

In another pan, melt the butter and fry the onion until soft - about 10-15 minutes. Add the garlic, and after it releases its aroma, add the flour and stir.

Pour in the milk, stirring constantly, so that you can dissolve the flour in it. Stir until the sauce begins to thicken.

Then add the mustard, basil, salt and pepper, grated Parmesan cheese.

Put the pumpkin in the sauce and mix well to cover all the spaghetti with it.

Serve with extra grated Parmesan cheese if desired.
