It only takes 15 minutes to make these quesadillas. They go well with black beans, but they also become so delicious with plain white beans. If you like the slightly spicy taste, add chili to the filling. You can serve with sour cream and mixed lettuce.

Required products :

  • 1 can of black beans (rinsed)
  • 1/2 cup grated yellow cheese
  • 1/2 cup classic tomato salsa
  • 4 small wholemeal tortillas
  • 2 teaspoons olive oil (or coconut oil)
  • 1 avocado

Method of preparation :

Mix the black beans, yellow cheese and 1/4 cup of classic tomato salsa in a bowl. Place the tortillas on a work surface and spread the filling mixture over half of each of the tortillas. Fold them in half.

Heat 1 teaspoon of olive oil in a large non-stick pan over medium heat. Put two tortillas and bake until golden on both sides for about 2-4 minutes. Repeat with the other two tortillas. Transfer to a cutting board and cut into portions. Serve with diced avocado and remaining tomato salsa.
