Required products :

For swamps :

  • 3 medium-sized apples, cut into cubes
  • 3 large eggs at room temperature
  • 1 3/4 tea cups flour
  • 1 teaspoon brown sugar
  • 3/4 teaspoon sugar + 1 tbsp
  • 1 teaspoon walnut oil
  • 1 tablespoon cinnamon + 1 teaspoon
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla extract

For the caramel glaze :

  • 1/2 cup butter, unsalted
  • 1 teaspoon brown sugar
  • 1 1/2 teaspoons powdered sugar
  • 2/3 tea cup whipping cream
  • 2 teaspoons vanilla extract
  • pinch of salt

Method of preparation :

  • In a bowl, mix the flour with 1 tablespoon of cinnamon, nutmeg, baking soda and salt.
  • In a large bowl, beat the eggs with the brown sugar, 3/4 cup white sugar, butter, eggs and vanilla.
  • Add the flour mixture and mix vigorously with a spoon until smooth.
  • Transfer the apples to a small bowl and sprinkle with 1 tablespoon of sugar and 1 teaspoon of cinnamon. Stir to taste evenly.
  • Add the apples to the dough and stir again.
  • Pour the dough into a greased pan covered with baking paper.
  • Bake the cake pan in a preheated 180 degree oven for about 40 minutes or until the toothpick comes out of the cake clean.
  • Meanwhile, make the glaze by melting the butter in a saucepan over medium heat.
  • Add the cream and brown sugar and stir until the mixture simmers.
  • Let it simmer for about 1 minute without stirring. Remove the pan from the heat.
  • Sprinkle with vanilla extract and a pinch of salt and gradually add the powdered sugar. Stir well.
  • Allow the cake pan to cool completely before glazing.
  • Cut the cake and serve.
