Required products :
1 packet of dry or dry active yeast
1 teaspoon of warm water with a temperature of 21 degrees
1 teaspoon cold water
1 teaspoon flour
1 teaspoon sugar
Method of preparation :
Crush and / or pour the yeast in warm water, add the sugar and wait until foam forms. Stir and transfer to a two-liter plastic or glass container. Pour the flour, cold water (the consistency should be obtained as a dough for pancakes).
Leave the container at room temperature for a few hours without closing it with a lid until bubbles begin to actively form. Stir and let the mixture stand overnight.
You can use the leaven for any dough.
If you prepare it earlier than necessary and you will not use it immediately, put it in the refrigerator. It will gradually turn into sourdough bread dough, which you should feed every day with equal parts water and flour (1/2 tea cup). Then leave the dough at room temperature, without closing the container, for about 3-4 hours, until bubbles form. Close it and put it in the fridge.
