Required products :

  • 1 teaspoon olive oil
  • 2 thin slices of smoked bacon, finely chopped
  • 2 cloves garlic, mashed
  • 1 onion, finely chopped
  • 3 sprigs of fresh thyme
  • 2 cans of 400 grams of white beans, drained
  • 850 milliliters of vegetable broth
  • 2 tablespoons finely chopped parsley
  • pepper

Method of preparation :

Heat olive oil and fry the bacon, garlic and onion for 3-4 minutes until the meat and garlic are browned and the onion is soft.

Add the thyme, then the beans and broth. Cook for 10 minutes.

Transfer the soup to a blender and puree, season with parsley and pepper.

Divide into 4 portions and serve immediately. If you keep some of the bacon, you can sprinkle with it for crunchiness, or use croutons.
