How To Cook Quick Vegetable Cream Soup - Recipe

Required products :

  • 1 large onion, cut into cubes
  • 400 grams of diced carrots
  • 4 stalks of celery, finely chopped
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon red pepper flakes
  • 3 medium-sized potatoes, cut into cubes
  • 3 cloves garlic, peeled and halved
  • 3 tea cups chicken or vegetable broth
  • 2 bay leaves
  • 3 sprigs of fresh thyme / or 1 teaspoon of dried thyme /
  • 1/4 teaspoon cream
  • salt and freshly ground black pepper to taste

Method of preparation :

 

  • Heat olive oil in a large saucepan over medium heat.
  • Add onions, carrots and celery, sprinkle with 1/2 teaspoon of salt and red pepper flakes.
  • Saute them for 5-7 minutes until soft, stirring occasionally.
  • Add the potatoes, garlic, bay leaves and thyme.
  • Stir and cook for another 5 minutes, adding a little olive oil if necessary.
  • Carefully add the broth and bring the soup to a boil.
  • Reduce heat and simmer under a lid for 15 minutes.
  • Remove from the heat, remove the bay leaves and thyme stalks and puree until smooth.
  • Add the cream and season with salt and pepper to taste.
  • Serve the vegetable cream soup warm, with freshly baked crotons.
