Required products :

  • 2 red onions, peeled and thinly sliced
  • 1/2 cup red wine vinegar
  • 1/2 teaspoon malt vinegar
  • 2 teaspoons pure maple syrup
  • 1/2 teaspoon salt
  • 1/2 teaspoon peppercorns, mix
  • 1/4 teaspoon allspice
  • 3 sprigs of fresh rosemary
  • 3 cloves garlic, peeled

Method of preparation :

  • Heat water in a medium saucepan until boiling.
  • In a bowl, mix the two types of vinegar, maple syrup and salt. Stir until the salt dissolves.
  • Add peppercorns, allspice, rosemary and garlic. Stir and set aside.
  • Blanch the onion in boiling water, drain and discard the water.
  • Transfer to a clean glass jar of suitable size and pour over the marinade.
  • Stir gently and close the jar tightly.
  • Cool the pickled onion for at least 30 minutes before serving.
  • Store in the refrigerator for up to 2 weeks.
