Method of preparation :
Preheat oven to 200 degrees.
Boil the quinoa with water and chicken broth.
Cut one tomato into slices and the other three into cubes. Combine the retail tomatoes with the quinoa, spinach, Italian mix of spices, parmesan, garlic and season with salt and pepper.
Pour into a pan.
Cut the mozzarella into slices and cover the casserole with it and the tomatoes, alternating a slice of cheese, a slice of tomato.
Bake for 30 minutes. Garnish with basil before serving.
