Necessary products:

  • 1 cup quinoa
  • 1 onion
  • 3 diced carrots
  • 2 cloves garlic
  • 2 glasses of water
  • salt and pepper
  • 4 tablespoons pitted olives
  • 2 tomatoes
  • 1 tablespoon dried tomatoes (powdered)
  • 2 tablespoons basil
  • 7 mushrooms
  • 6 tablespoons olive oil

Method of preparation:

Fry onions, garlic and carrots in a deep pan, stirring occasionally. Add the quinoa, pour the water, season with salt and pepper. After boiling, reduce heat and simmer for 20 minutes. Then remove from the heat, cover with a lid and leave for 10 minutes.

Transfer the quinoa and vegetables to the salad bowl, then add the olives, chopped fresh tomatoes, basil and tomato powder.

Fry the mushrooms in olive oil, add them to the other products, salt and the garnish is ready. Serve hot.
