Boil the quinoa, seasoning it with a pinch of salt. When ready, leave for 10 minutes to cool.
Add the broccoli, cheddar, baking powder and spices to it, add salt and stir, add the egg and stir again.
Spray muffin pan with cooking spray and fill the tins with quinoa.
Bake for 20-25 minutes at 180 degrees until done.
Refrigerate for 20 minutes before attempting to remove the muffins.
Serve them with a favorite milk sauce, such as Ranch sauce.
