How To Cook Quinoa Salad With Avocado, Olives And Beans - Recipe

Required products :

  • 60 milliliters of red wine vinegar
  • 50 grams of basil
  • 1 teaspoon ground black pepper
  • 240 grams of quinoa
  • 1/2 avocado
  • 400 grams of canned beans
  • 100 grams of green spices
  • 2 cloves garlic
  • 1 teaspoon salt
  • 120 milliliters of olive oil
  • 200 grams of tomatoes
  • 2 green onion stalks
  • 120 grams of Kalamata olives

 

Method of preparation :

Make a sauce by mixing vinegar with garlic, basil, salt and pepper. Beat at high speed in a food processor, pouring a thin stream of olive oil to obtain an emulsion. Refrigerate while you prepare the salad.

Boil the quinoa according to the instructions on the package, then remove from the heat and cool.

While the beans are cooling, cut the tomatoes into two pieces, the avocado into small cubes and the green onions into small pieces.

Add tomatoes, avocados, onions, beans, olives and chopped green spices to the already cold quinoa beans.

Pour 2 tablespoons of sauce and mix thoroughly. If you wish, you can use more than the dressing.
