How To Cook Quinoa Salad With Roasted Tomatoes, Caramelized Onions And Spinach - Recipe

Required products :

  • 260 grams of cherry tomatoes
  • a little olive oil
  • black pepper to taste
  • sea ​​salt to taste
  • a pinch of brown sugar

 

  • 230 grams of quinoa
  • 5 tablespoons olive oil
  • 400 milliliters of vegetable broth
  • 180 milliliters of water
  • 1/2 lemon
  • 1 clove garlic
  • 1 bunch parsley
  • connection fresh mint

 

  • 2 tablespoons olive oil
  • 2 onions
  • 2 teaspoons brown sugar
  • 1 tablespoon balsamic vinegar

 

  • 100 grams of spinach

 

Method of preparation :

Cut the cherry tomatoes in half, place in a pan, sprinkle with olive oil, salt, sprinkle with black pepper, a pinch of brown sugar and stir. Arrange them with the cut pieces up and bake in the oven at 175 degrees for about 40 minutes (they should turn red).

Heat 2 tablespoons olive oil in a saucepan over high heat. Pour the quinoa and fry for a few minutes, stirring constantly. Then pour the broth and water, wait for the liquid to boil, close the container with a lid, reduce the temperature of the stove and let the beans boil until soft and absorb all the liquid (about 30-40 minutes). Then remove the pan from the heat and leave for 5 minutes without removing the lid.

Fry the chopped onion in 2 tablespoons of olive oil over low heat. Once the onion is soft, add 2 teaspoons of brown sugar, pour the vinegar, season and fry for another 5 minutes to redden and caramelize.

Add the juice of half a lemon, 2-3 tablespoons of olive oil, chopped garlic and most of the parsley and mint to the prepared quinoa. Stir thoroughly and season to taste if necessary. Mix with the spinach leaves and pour the combination into a large bowl suitable for serving the salad. Put the roasted tomato pieces, caramelized onions on the beans and sprinkle with the remaining mint and parsley.
