Required products :

  • 1 whole rabbit, without skin, cut into 8 pieces
  • 1 onion, peeled
  • 10 cloves of garlic, peeled
  • 3 fresh bay leaves / or 6 dried /
  • 8 cloves
  • 15-20 whole grains of black pepper
  • 6 cardamom pods
  • 10 stalks of fresh thyme
  • 4 sprigs of fresh rosemary
  • 1 teaspoon mustard seeds
  • kosher salt and crushed black pepper
  • 3-6 tea cups of rapeseed oil and olive oil, in a ratio of 50:50
  • lemon juice for sprinkling

Method of preparation :

  • Rinse the rabbit meat under running cold water and dry it with kitchen paper.
  • Arrange the pieces in a large saucepan and add the onion, garlic, bay leaf, cloves, black pepper, cardamom, thyme, rosemary, mustard seeds and 1 tablespoon kosher salt.
  • Add enough fat to cover the rabbit meat.
  • Place the lid on the casserole and bake in a preheated oven at 150 degrees for about 3 hours.
  • Remove the lid and lightly bake until golden brown.
  • Arrange the rabbit meat on a plate, grease it with the fat in which it was cooked and sprinkle with lemon juice.
  • Season with salt and crushed black pepper and serve.
