Required products :

1 medium rabbit

1 lemon

4 tomatoes

1 carrot

6 tablespoons olive oil

100 grams of olives

2 sprigs of rosemary

2 stalks of sage

4 cloves garlic

1 red hot pepper

200 milliliters of white wine

250 milliliters of chicken broth

salt and pepper to taste

 

Method of preparation :

Cut the rabbit into 6-8 parts, rub them with salt, pepper and fry in olive oil. Add the green spices.

Peel the garlic cloves and cut each in half. Cut the hot pepper into small pieces. Add the spicy spices to the meat, also the chopped carrot. You should pour the wine and broth, sliced ​​lemon.

Close the pan with a lid and let the dish cook for an hour on low heat.

Peel a squash, grate it and add it to the remaining products for 30 minutes before removing from the heat. 20 minutes later add the olives (pitted). Finally, season the ragout with salt and pepper to taste.
