Necessary products:

  • 1 rabbit, cut into portions
  • salt, pepper and olive oil
  • 2 onions, chopped
  • 2 cloves garlic, pressed
  • several whole orange peels
  • 1 cinnamon stick
  • 2-3 bay leaves
  • 1/2 teaspoon dry red wine
  • 500 grams of canned tomatoes
  • 1/2 teaspoon water or broth
  • 300 grams of tagliatelle
  • a few sprigs of fresh parsley
  • 1-2 teaspoons smoked paprika
  • 50 grams of melted butter

Method of preparation:

Wash, dry and spread the rabbit meat with a mixture of butter, salt, black and red smoked pepper. Set aside and sauté onions, garlic, orange peel, cinnamon stick and bay leaves in a deep saucepan.

 

Season the mixture with red wine, add the tomatoes, broth, olive oil and meat. Cook the dish on low heat for two hours.

 

Meanwhile, boil the tagliatelle in salted water, cool and distribute them on a plate. When the dish is ready, cool and serve warm, garnished with pasta.
