Required products :

  • 150 grams of flour
  • 150 grams of sugar
  • 75 grams of crushed almonds
  • 3 eggs + 1 yolk
  • 100 grams of butter
  • 200 grams of raspberries
  • 750 grams of cottage cheese (skimmed)
  • packet of vanilla sugar
  • 100 grams of starch
  • 2 tablespoons oil
  • 1 teaspoon lemon peel (grated)

 

Method of preparation :

Cut the cold butter into cubes. Sift the flour into a bowl and add 50 grams of sugar, crushed almonds, a pinch of salt and stir. Then put 1 egg yolk, pieces of butter and quickly knead the dough with your hands.
Wrap it in plastic wrap and refrigerate for half an hour.

If you use frozen raspberries, first thaw them at room temperature. Divide the three eggs into yolks and whites.

Beat the egg whites to a stiff foam with a pinch of salt. Mix the curd with the remaining sugar, add the vanilla and egg yolks. Followed by starch, oil and citrus peel. Stir.

To this combination add first the beaten egg whites, then the raspberries.

Roll out the dough thinly, put it in a greased pan, and it should cover the walls of the dish.

Spread the filling on the base, flatten it and bake in a preheated oven for about an hour.

When the cheesecake is ready, take it out, let it cool and then serve with a decoration of fresh raspberries.
