Method of preparation:
Preheat the oven to 180 degrees and grease with oil the form in which you will bake the cupcakes.
Beat the egg whites to a froth along with the vinegar, 1 tbsp water and salt. Gradually add the sugar without stopping to beat. Add the vanilla extract and beat for another minute. Then add a little flour and mix gently. Do this until you have poured all the flour.
Pour the resulting mixture into the form and bake for 30 minutes.
Using a knife, separate the marsh from the walls of the vessel and leave for 2 hours.
Pour the jam into a saucepan and wait for it to boil, stirring constantly. Melt the chocolate in the microwave and add the cream to it.
With a suitable round shape, cut circles from the cake with a diameter of 7.5 cm and glue them two by two with the jam. Spread with chocolate glaze and garnish with fresh raspberries.
