Method of preparation :
Start with the preparation of raspberry jam - put the fruit in a saucepan and add sugar. Put on a hot plate to cook, when the crystals melt increase the temperature of the hot plate and let the fruit boil for 4 minutes. Remove from the heat and strain through a sieve, stirring with a spoon to remove the seeds from the jam. Allow to cool.
Line three shallow paper biscuit trays.
Using a round cookie cutter, draw a few circles on the paper in each tray, then turn the paper face down so that the pencil / pen does not touch the cookies.
Knead all the products for the dough, it should be a little thicker than cake. Put it in a bag with a star attachment at the end. Make cookies following the circles you prepared earlier, shaping them in a way that you like.
Bake for 13-15 minutes until golden. Cool on paper for 5 minutes, then remove the cookies with a spatula.
Prepare the buttercream - beat the soft butter with the sugar and vanilla until a smooth cream is obtained, put it in a bag with a star tip.
Spread the raspberry jam on half of the cookies. Make a star of the jam on top and close with a second cookie. Sprinkle with powdered sugar and serve.
