Required products :

500 grams of flour

1 egg + 4 yolks

50 milliliters of water

125 grams of mozzarella

5 grams of basil

thyme stalk

200 milliliters of milk cream

50 grams of pesto sauce

salt to taste

 

Method of preparation :

Knead the dough, adding to the flour the whole egg, yolks, water and salt to taste.

 

The products for the filling are: mozzarella, basil and thyme. Cut them into small pieces, mix and form small balls from the aromatic combination.

 

Roll out the dough into two thin layers. Spread one of them on a suitable form with holes (for example an ice form), spray with water and put a ball of stuffing in each recess.

 

Cover with the second layer of dough and cut the ravioli using another form, which you put on the dough and press. Of course, you can make them without shapes: spread the dough on the counter, arrange the mozzarella balls, cover with the other sheet of dough and cut out circles or other shapes using a knife or a small bowl with a suitable wide hole.

Boil the ravioli for about 5-6 minutes. Then transfer them to a pan, pour the cream, add the pesto sauce and put the pan on medium heat until the liquid evaporates and the sauce thickens.

Serve the dish with pieces of mozzarella and thyme.
