Required products :

for the base:

  • 1/2 cup raw hazelnuts
  • 1/2 cup raw walnuts
  • 2 cups dates
  • 1 teaspoon cinnamon

for cream:

  • 2 cups raw porridge
  • 1 frozen banana
  • 5 dates
  • 1/3 cup honey
  • 2 cups blackberries
  • 1 tablespoon coconut oil
  • 1/4 cup water
  • juice of 1 lemon

Method of preparation :

Soak the cashews in water for 4 hours to 1 day. It needs to soften so that a creamy texture can be obtained when blending.

for the base:

Blend the hazelnuts and walnuts for 2 minutes. Add the dates and cinnamon to the crushed nuts and blend until sticky. Pour into a cheesecake tin and press the mixture to the bottom with your fingers or a spoon. Put in the freezer while you prepare the cream.

for cream:

Drain the cashew water and blend it together with the frozen banana, dates, honey, blackberries, coconut oil, water and lemon juice. A creamy mixture should be obtained.

assembling the cake:

Remove the form from the freezer and pour the cream on the base. Put back in the freezer for 3 hours.

When you take it out, sprinkle with fresh berries. Leave for a few minutes to relax and cut.
