This sweet dessert provides a good balance between chocolate and berries, gluten-free and refined sugar.

Required products :

chocolate base:

  • 2 cups pecans (or nuts)
  • 1 and 1/2 cups of dates (or soft organic dates)
  • 1/3 cup raw cocoa powder
  • 1 teaspoon vanilla paste (or vanilla extract)
  • pinch of Himalayan pink crystal salt

berry cream:

  • 1 and 1/2 cups raw cashews soaked for at least 4 hours
  • 1/2 cup fresh strawberries, washed and cleaned
  • 1/2 cup fresh raspberries, washed
  • 1/2 cup fresh blueberries, washed
  • 1/2 cup maple syrup
  • 1/2 cup coconut milk (preferably canned)
  • 1 teaspoon vanilla paste (or vanilla extract)

* A tea cup is used to measure the quantities.

Method of preparation :

chocolate base:

Blend the pecans (or walnuts) to fine crumbs. Add cocoa powder, vanilla paste (or vanilla extract) and Himalayan salt and blend until smooth. Add the dates and process until a sticky dough forms. Distribute the resulting mixture as a loaf in a square pan and smooth with the back of a spoon.

berry cream:

Blend the raw cashews, strawberries, raspberries, blueberries, maple syrup, coconut milk and vanilla paste (or vanilla extract) until smooth and creamy. Pour the cream on the chocolate base and put in the freezer for at least 2 hours.

Then remove and thaw for at least 5 minutes at room temperature before serving. Garnish with fresh berries and raw cashews if desired.
