Lutenitsa is a traditional Bulgarian food product, a favorite of young and old. It is consumed at any time of the year, especially during the cold winter months. Served as a side dish to meat and lean dishes. A typical Bulgarian breakfast is a slice of bread with lutenitsa and a wish with shredded cow's cheese. It takes many hours and patience to prepare the lyutenitsa, but the end result is always worth it. Here are some original old recipes on how to make a  traditional homemade rustic finely ground lyutenitsa . If you like to experiment and try new flavors, we have prepared an unconventional recipe for sweet lyutenitsa with onions and Turkish delight .

A classic recipe for homemade finely ground lyutenitsa

Required ingredients:
  • 3 kilograms of tomatoes
  • 5 kilograms of red peppers
  • 3 kilograms of eggplant
  • 2 kilograms of carrots
  • 200 milliliters of oil
  • 3-4 tablespoons of sugar
  • 3 tablespoons salt
  • black pepper and cumin to taste
  • hot pepper (optional)
  • kim (optional)
Method of preparation:

Boil the carrots and grind them. Bake the peppers and aubergines in the oven, pepper or on the fire. Put them in a bowl and cover with a lid to soften, then peel and grind finely through a meat grinder, blender or other electric grinder. Peel the tomatoes and grind them separately from the other vegetables.

Pour the tomato puree into a large bowl and cook over medium heat, stirring often. Once it starts to thicken, pour the oil and continue to stir for another 10 minutes. Add the remaining minced vegetables, season with salt, sugar and spices to taste. If you want the lyutenitsa to be spicy, add hot peppers. Continue to cook until the desired density is reached. Stir often so as not to burn the bottom.

Fill the lyutenitsa in jars, boil and store.

Homemade rural finely ground lyutenitsa

Necessary products:
  • 2 kg of roasted red peppers
  • 1 kg of roasted aubergines (about 3 pieces)
  • 500 grams of boiled carrots
  • 100 grams of sugar
  • 2 tablespoons salt
  • 500 grams of boiled potatoes
  • 1 kg of tomato puree
  • 100 milliliters of oil
Method of preparation:

Peel the roasted peppers and aubergines. Use a meat grinder and finely grind peppers, aubergines, carrots and potatoes. Put the vegetables in a suitable cooking vessel. Add oil, tomato paste, sugar, salt and mix until smooth.

Heat the mixture over low heat. Beat it with a blender until it gets a smooth and fine consistency and stir constantly so as not to burn and spray. Cook on low heat for an hour, an hour and a half or until thickened and obtain the desired consistency, then cool and distribute the lyutenitsa in bowls or serve, spread on a slice of cheese. Fill the remaining mixture into jars and, if desired, weld or store in the refrigerator.

Sweet lyutenitsa with onions and Turkish delight

 

Necessary products:
  • 5 kilograms of tomatoes
  • 18 pieces of candy onions
  • 1-2 boxes of ordinary Turkish delight
  • 125 milliliters of oil
  • salt to taste
Method of preparation:

Peel a squash, grate it and squeeze the juice. Put the tomato puree in a saucepan together with the other ingredients and cook until the desired density is obtained, stirring often. Season with salt to taste and fill into jars or serve.

Tips for making finely ground homemade lyutenitsa

  • If you do not have a meat grinder, use a blender, blender or other electrical appliance suitable for finely grinding vegetables.
  • You can store the minced vegetables in the refrigerator for up to a day before you start cooking the lyutenitsa.
  • Lutenitsa can be prepared in a pot, cauldron or other vessel and cooked both on a home kitchen stove and in an oven or on a hearth.
  • Stirring the lyutenitsa is an almost continuous process, because the ingredients can quickly burn on the bottom of the dish. It is advisable to use a long wooden spoon for stirring, as when boiling the mixture begins to spray and can stain you.
  • It is advisable to peel the tomatoes first and then grind and separate the seeds. To do this, strain through a colander or sieve after grinding to remove any remaining husks and seeds. The tomato puree thus obtained is boiled until it thickens. Stir often so as not to burn. If you wish, you can buy ready-made tomato puree, but this way you will get lyutenitsa with a different taste from the homemade one.
  • To store the lyutenitsa for a longer time, you need to sterilize the jars. To do this, arrange them in a large container (pot or saucepan) and fill it with water. Once the water boils, simmer for about 15-20 minutes, then remove from the heat or simmer, allow to cool slightly and store in a dry, cool place.
