Juniper is a small red fruit, very similar to dates, rose hips or large olives. It ripens in September, when we start preparing winter food. It has a sweet and slightly tart taste. Under the thick shell of jujube there is a juicy and slightly sour inside, as well as a large stone, like that of the date. Wash the jujube under cold running water and drain. Cut in half and remove the stones. Keep in mind that this may be a little difficult for you.
Pour the water with the sugar into the pan and bring to a boil, then add the citric acid and simmer. Stir the sugar syrup until the sugar is completely dissolved and remove from the heat.
1 way (fast):Pour half the sugar syrup to the fruit, put on low heat for 1 hour. Remove and set aside for 6-7 hours, pour the remaining syrup and cook until thickened.
2 way (slow):Pour the jujube over the syrup and let it stand overnight. The next day, heat the mixture over medium heat. After boiling, reduce the temperature and cook for about 10 minutes, stirring occasionally and removing the foam. Remove the pan from the heat and let stand overnight again. In the morning, boil the jam again in the same way for 10 minutes, then fill in sterilized jars. Cool and store in a cool place.
Wash, drain and cut into two jujubes, remove the stones.
Mix all ingredients in a small saucepan and heat over medium heat. Bring the jam to a boil, reduce the heat and simmer until thickened. Stir periodically. Remove the cardamom pods and lemon zest and transfer the hot jam to a jar. Close tightly and turn upside down until completely cooled.
Serve homemade jujube jam with yogurt, muffins, pancakes or other culinary temptations.
