Homemade ketchup with roasted garlic

Necessary products for the preparation of homemade ketchup with roasted garlic:
  • 1 head of garlic
  • 1 tablespoon olive oil
  • 1 can of tomato puree
  • 1/2 teaspoon water
  • 2 tablespoons apple cider vinegar
  • 1/4 teaspoon ginger powder
  • salt to taste
  • 1 pinch of allspice powder

How to prepare ketchup with roasted garlic:

Preheat oven to 180 degrees.

Put the head of garlic on a sheet of aluminum foil, pour olive oil and wrap well. Place on a sheet of parchment paper and bake for about 45 minutes. Then remove from the oven and allow to cool for about 30 minutes. Once the foil has cooled enough to unfold, remove the garlic head, separate the cloves and peel them. Mash the inside with a fork until smooth.

Mix the garlic paste with the other ingredients in a saucepan and mix well. Bring the mixture to a boil, then reduce the heat and simmer for 20-30 minutes or until the desired density is reached. Remove the bay leaf and allow the ketchup to cool completely before filling it into jars. Store in the refrigerator.

* You can skip the step of roasting garlic if you prefer to make more traditional ketchup or do not have much free time.
