Required products :

  • 1 tablespoon olive oil
  • 2 onions, finely chopped
  • 40 grams of soft butter
  • 1 1/4 teaspoon cumin seeds
  • 2 tablespoons finely chopped thyme
  • 1 head of red cabbage, cut into thin strips
  • 400 milliliters of vegetable broth

Method of preparation :

Put olive oil in a large saucepan. Once warm, add the onion and fry for 5-10 minutes until well softened.

Meanwhile, mix the butter with the spices and set aside.

Add the cabbage to the pot with the onions and pour the broth. Allow to simmer for 12-15 minutes under a lid, stirring occasionally (it is best to just press the cabbage down to cover the broth). During this time, the liquid should have almost evaporated and the cabbage should have boiled.

Drain the vegetables from the excess liquid and mix with the oil to melt the heat. Season the cabbage to taste and serve with a few sprigs of thyme.
