Required products :

  • 100 grams of green olives
  • 100 grams of red lentils
  • 1 onion
  • 2 small carrots
  • 400-450 milliliters of broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • a pinch of chili pepper
  • ground black pepper and salt to taste
  • 1-2 tablespoons olive oil

 

Method of preparation :

Grate the carrots, cut the onion into small cubes and chop the garlic finely.

Heat olive oil in a pan, first fry the garlic, then add the onion and as soon as it becomes translucent (after about 2-3 minutes), pour the carrots and lentils in the pan. Stir, pour the broth, season and let the products simmer until the lentils are fully cooked (about 25-30 minutes). Let the mixture cool then and then add the green olives to it.

Beat with a blender, you should get a homogeneous puree.

The hummus is ready, serve it with lavash or rye bread.
