Wash the potatoes well and cut them into shape at your discretion, and onions into crescents.
Heat olive oil in a deep frying pan and when hot, add the potatoes, onions and garlic and mix well.
Season with salt and pepper and add the thyme sprigs. Cook for 30 minutes, stirring occasionally. When the onion softens and the potatoes turn golden, add the olives and pine nuts.
Stir and wait briefly until they absorb the heat. Remove from the heat and sprinkle with basil, then serve.
