Required products :

2,300 kg beef ribs
1/3 tea cup coffee beans
1/4 white tea cup white pepper beans
4 tablespoons sea salt
4 tablespoons smoked sea salt
2 tablespoons smoked paprika
olive oil and Dijon mustard to taste

Method of preparation :

Preheat oven to 260 degrees. Grind the coffee, but not finely. Crush or grind together the white peppercorns and sea salt. Mix them with smoked paprika and coffee.
Put the ribs in a pan and grease them with plenty of olive oil. Rub with the dry mixture, which should cover the ribs tightly.
Place the pan in the preheated oven for about 10 minutes, then reduce the temperature to 150 degrees and remove the ribs. Wrap them in foil. Place on a wire rack and place it in the tray, making incisions in the foil at the bottom of the resulting "package". Let the dish bake at low temperature for 3.5-4 hours. Then reduce the temperature to 100 and bake for 5 to 7 hours.
