Cut the onion and fry it in some oil, add the washed rice, finely chopped peppers, fry and season with salt and pepper.
Cut the tomatoes into circles. Take a suitable form and arrange layers in it: half of the tomatoes, a row of rice, the remaining tomatoes. Add 4 - 5 tablespoons of oil, pour half a glass of water and put the dish to simmer in a moderate oven for 30 minutes. Pour the mixture of beaten eggs and milk (cream) over the finished casserole, return to the oven until it turns red.
