How To Cook Rice Garnish With Eggplant, Tomatoes And Garlic - Recipe

Required products :

2 teaspoons long grain rice
400-500 grams of eggplant
200 grams of carrots
150-200 grams of sweet peppers
200 grams of tomatoes
8-10 cloves garlic
3 tablespoons oil
1 tablespoon butter
1-2 teaspoons spice mix of your choice
2 teaspoons salt

Method of preparation :

Wash and clean the vegetables. Cut the aubergines into large pieces, the carrots into thin straws, the peppers into strips, the tomatoes into oblong slices. Peel the garlic cloves.
Heat the oil and butter in a deep saucepan, add the carrots and fry over medium heat for about 5-7 minutes.
Then add the peppers, and a few minutes later the eggplants and whole garlic cloves.
Season with salt and spices of your choice. After 5-7 minutes, pour the dried rice over the vegetables and add the tomatoes. Stir.
Let everything cook for another 10 minutes, stirring constantly.
When the rice becomes translucent, pour 3.5 teaspoons of hot water, close the container with a lid and simmer on low heat for 15-20 minutes.
If the water evaporates and is absorbed by the rice and it is not ready, add a little more.
The berries should be soft but not boiled.
Stir in the finished dish and let stand for 15 minutes under a lid before serving.
