How To Cook Rice Noodles With Mushrooms, Broccoli And Bacon - Recipe

Required products :

  • 1 tablespoon chopped ginger
  • 120 grams of rice noodles
  • 2 teaspoons hot water
  • 120 grams of bacon, finely chopped
  • 1 tablespoon sesame oil
  • 1 medium onion, chopped
  • 2 stalks of celery, chopped
  • 1 medium pepper, on sticks
  • 60 grams of Chinese wood mushrooms (Judas ear)
  • 100 grams of broccoli
  • 1/4 red cabbage, chopped
  • 1 teaspoon chopped hot pepper
  • 1 teaspoon coriander seeds

Method of preparation :

Pour hot water over the ginger and noodles and soak for about 10 minutes (if the noodles are thin, shorten the time and watch when the paste softens).

Fry the bacon until crispy, and take it out on a plate, set aside.

Put the sesame oil in the same pan and fry the onion until soft. Add celery, peppers, mushrooms (if you use dried, pre-soak them) and broccoli. Fry for 2-3 minutes and add the cabbage, hot pepper, coriander seeds and stew for 7-8 minutes until the vegetables are soft.

Add the noodles and stir, then serve the dish, sprinkling each portion with bacon.
