How To Cook Rice Nut Pastes With Peanut Butter And Chocolate - Recipe

Necessary products

For swamps:

  • 1 3/4 rice crisps / rice nuts
  • 1/4 teaspoon sugar and water
  • 3 tablespoons corn syrup
  • 3 tablespoons butter


For the peanut layer:

  • 150 grams of milk chocolate
  • 1 teaspoon peanut butter

 

For the chocolate glaze:

  • 90 grams of dark chocolate (60-70% cocoa)
  • 1/2 teaspoon corn syrup
  • 4 tablespoons butter

 

Method of preparation :

Line a tray with parchment paper and lightly grease.

Pour 1/4 teaspoon of water into a saucepan, carefully add the same amount of sugar and 3 tablespoons of corn syrup. Stir with a wooden spoon. The mixture should boil over high heat. Use a thermometer to measure the temperature. When it reaches 110 degrees, remove the syrup from the heat. Drizzle the rice nuts with the sweetness, stirring quickly to cover the grains evenly with the syrup. Then spread (pressing against the bottom) on the parchment in the pan and level the layer.

Wait for the base to cool to room temperature, meanwhile prepare the mixture for the next layer.

Cut the milk chocolate into large pieces. Mix them with peanut butter in a metal bowl, place in a water bath and stir until the products melt and combine.

When you remove the cream from the heat, continue to stir for another 30 seconds. Then pour over the rice nuts and put the pan in the fridge for an hour so that the second layer can harden.

Until this happens, prepare the glaze.

Cut the chocolate into large pieces and mix it in a metal bowl with the corn syrup and butter. Cook in a water bath, stirring with a rubber stirrer, until the consistency is uniform. Remove the pan from the heat, stir the contents for another 30 seconds and pour it over the peanut layer. Level the surface and store the dessert in the refrigerator for an hour.

Once the coating has hardened, cut the sweetness into squares and serve.

You can store up to 4 days in the refrigerator.
