Required products :
400 grams of cooked rice
100 grams of yellow cheese
2 tablespoons olive oil and fat for baking pancakes
white part of 2 stalks of leeks, cut into circles 1 cm thick
250 milliliters of vegetable or chicken broth
100 milliliters of high-fat cooking cream
5 eggs
2 tablespoons bolesgo or parsley
1 teaspoon saffron
salt and ground black pepper to taste
black peppercorns, crushed wholesale
Method of preparation :
Pour saffron with 1 tablespoon of hot water and a few minutes later add the rice.
Cut the yellow cheese into thin straws, pour over the rice, stir and leave the mixture for the moment.
In a deep frying pan, heat the olive oil over high heat and fry the sliced leeks for about 3 minutes (until it changes color slightly and turns red). Pour the broth, cream and coarsely crushed black peppercorns. Reduce the heat to low and let the leeks simmer for 10 minutes to soften and thicken the sauce. Add salt to taste and sprinkle with fresh spices just before serving.
Add salt and rice, beat 1 egg and stir.
Heat a little vegetable oil in a pan. Using a spoon, scoop out the rice mixture and bake pancakes about 1 cm thick and 6-7 cm in diameter. Cook for 4 minutes on each side until golden brown.
