How To Cook Rice Porridge With Onion, Saffron And Yellow Cheese - Recipe

Required products :

  • 6 teaspoons chicken broth
  • 1/8 teaspoon saffron
  • 9 tablespoons unsalted butter
  • 1 small onion
  • 2 tea cups rice (arborio)
  • 1 teaspoon grated yellow cheese or other hard cheese

 

Method of preparation :

Pour the broth into a saucepan and put on medium heat. When the liquid boils, pour 1/2 cup of it and pour saffron. Leave the remaining amount in the container, which you close with a lid.

Heat 5 tablespoons of butter, add the finely chopped onion and fry for 2-3 minutes. Then pour the rice, stir and let it boil for 4-5 minutes, stirring all the time with a wooden spoon.

Pour 1/2 cup of broth, stir for 2-3 minutes or until it is absorbed by the berries. Then add another 1/2 cup of broth and so on until the liquid is depleted. This will take you about 25 minutes.

Leave the mixture on the stove for another 3 minutes and pour the strained broth with which you poured the saffron. Stir constantly for another 2 minutes and remove the rice from the heat.

Add the remaining butter and half of the yellow cheese, stir again.

Finally, sprinkle with the other part of the cheese and the dish is ready to serve.
