Required products :

  • 100 grams of rice
  • 100 milliliters of liquid cream with a fat content of 10% for the porridge
  • 140 milliliters of liquid cream with a fat content of 33% for caramel
  • 2 egg yolks
  • 140 grams of brown sugar (40 grams for porridge and 100 grams for caramel)
  • 2 teaspoons soy sauce (or 1/2 teaspoon salt) for caramel
  • 50 grams of butter (for caramel)

 

Method of preparation :

First make the salted caramel. Heat the high-fat cream until almost boiling. Caramelize the sugar in a thick-bottomed bowl - do not stir, just tilt the bowl in different directions so that the sugar melts faster.

When liquid caramel is obtained, start pouring the hot cream a little, stirring quickly and carefully. Let the mixture boil for a few minutes, add the butter. Do not stop stirring and after 2-3 minutes remove from the heat. Pour the soy sauce, stir and pour the caramel into a jar, which is closed with a lid.

 

Take care of the rice. Boil it until semi-finished in water (1 part rice - 1.5 parts water). When almost ready, pour the cream (10%) and cook, stirring until fully cooked.

Beat the yolks with the sugar. Remove the rice porridge from the heat, add the beaten egg yolks, stirring constantly. Return the pan to the hob and stir vigorously for about 2 minutes (until the consistency thickens).

Divide the porridge into suitable bowls and pour the caramel.
