Required products :

  • 1 cup basmati rice
  • 2 teaspoons water (or broth)
  • 1/4 cup roasted peanuts
  • 1 tablespoon margarine (you can use butter or oil)
  • 1 onion, thinly sliced
  • 1 teaspoon grated ginger
  • 3/4 tea cup grated carrots
  • salt to taste
  • cayenne pepper to taste
  • finely chopped coriander

Method of preparation :

Put the rice and water in a saucepan and cook under a lid for about 20 minutes on medium heat.

While the rice is cooking, grind the peanuts.

Heat the fat in a pan and fry the onion until soft - about 10 minutes. Add ginger and carrot, season to taste. Reduce heat to low and simmer for 5 minutes. Add hot pepper and ground peanuts.

When the rice is ready, pour it into the pan with the carrots and onions and stir. Serve garnished with fresh coriander and a few whole peanuts.
