Required products :

  • 400 grams of cod fillet
  • 1 teaspoon turmeric
  • 300 grams of long grain rice (basmati)
  • 2 tablespoons sunflower oil
  • 1 bunch green onions, chopped
  • 125 grams of cherry tomatoes, halved
  • 2 teaspoons curry
  • 4 eggs
  • sea ​​salt
  • black pepper, freshly ground

Method of preparation :

Place the fish fillets skin side up in a saucepan of cold water. Turn the hob on and off as soon as the liquid boils. Leave the fish in it for 5 minutes, remove and drain.

Add the turmeric to the resulting broth and return it to the stove to boil. Add the rice (pre-washed in cold water) and cook for 10-12 minutes, until done. Meanwhile, boil the eggs and peel them.

Remove the skin from the fillet and cut it into pieces.

Heat the oil in a pan and fry the onion and cherry tomatoes in it for 2 minutes, add the curry powder and after a minute remove from the heat.

Drain the rice and mix it with the onions and tomatoes. Add the fillets and season with salt and pepper. Serve with boiled eggs.
